Wild Strawberry & Basil Pink Gin Iced Tea

Serves: 4-6

Ingredients

  • 150ml Three Wrens Strawberry & Basil Gin
  • 3 English breakfast tea bags
  • 750ml boiling water
  • 3 tbsp runny honey (or adjust to taste)
  • 100ml fresh lemon juice
  • 100g fresh strawberries, hulled and sliced
  • A handful of fresh basil leaves (plus extra for garnish)
  • Ice cubes (to serve)
  • Soda water or sparkling elderflower (optional)

Step-by-Step

1. Brew the Tea:

    • Add the tea bags to a heatproof jug or teapot.
    • Pour over the 750ml of boiling water and let steep for 5 minutes.
    • Remove the tea bags and stir in the honey while the tea is still warm. Allow to cool to room temperature.

2. Chill the Mix:

    • Once cooled, add the lemon juice, sliced strawberries, and torn basil leaves to the tea.
    • Cover and place in the fridge for at least 1–2 hours to infuse and chill.

3. Assemble the Iced Tea:

    • When ready to serve, fill glasses or a large jug with ice.
    • Pour over the infused tea mix, straining if you prefer a cleaner look.
    • Add 25–50ml of Three Wrens Strawberry & Basil Gin per glass (or the full 150ml if using a jug).
    • Stir gently.

4. Finish & Garnish:

    • Optional: top up each glass with a splash of soda water or sparkling elderflower for a bit of fizz.
    • Garnish with extra strawberries and a sprig of fresh basil.
