Ingredients

  • 50ml Three Wrens English Herb Garden Gin
  • 4–5 slices of fresh cucumber
  • 2 sprigs of fresh thyme
  • 20ml Fresh lemon juice
  • 10ml Sugar syrup (or adjust to taste)
  • Garnish: Cucumber slice and a small thyme sprig
  • Ice

Step-by-Step

  1. Muddle the cucumber and thyme – in a shaker with the sugar syrup and lemon juice to release the flavours.
  2. Add the gin and ice – then shake well for about 15 seconds until chilled.
  3. Double strain into a rocks glass over ice – to catch any cucumber or thyme bits.
  4. Garnish – with a fresh slice of cucumber and a small sprig of thyme tucked in for aroma.
