Ingredients

  • 50ml Three Wrens Strawberry & Basil Gin
  • 4–5 fresh strawberries, hulled
  • 4–6 fresh basil leaves
  • 20ml fresh lemon juice (about half a lemon)
  • 15ml sugar syrup (see note below)
  • Ice (cubed and crushed)
  • Soda water (optional, to top)
  • Fresh basil sprig and strawberry slice, for garnish

Sugar Syrup Note:

To make sugar syrup: Mix equal parts granulated sugar and boiling water. Stir until fully dissolved, let it cool, and store in the fridge.

Step-by-Step

  1. Muddle the strawberries and basil
    In a cocktail shaker, add the strawberries and basil leaves. Gently muddle (press) them with a muddler or the back of a spoon until juicy and fragrant. Don’t overdo it – bruising the basil too much can turn it bitter.
  2. Add the rest
    Pour in the Three Wrens Strawberry & Basil Gin, lemon juice, and sugar syrup.
  3. Shake it up
    Add a handful of ice cubes to the shaker. Shake vigorously for about 15 seconds.
  4. Strain and serve
    Double strain (through a cocktail strainer and a fine sieve) into a rocks glass filled with crushed ice.
  5. Garnish
    Garnish with a fresh basil sprig and a slice of strawberry on the rim or floating on top.
  6. Optional fizz
    If you’d like a lighter, longer drink, top with a splash of soda water.
