Ingredients

  • 50ml Three Wrens Spiced London Dry Gin
  • 20ml Fresh lemon juice
  • 15ml Maple syrup (or honey syrup if you prefer)
  • 15ml Egg white or aquafaba (for the classic sour foam)
  • Optional: 1 dash aromatic bitters (like Angostura)
  • Garnish: Grated nutmeg, orange zest, or a dried citrus wheel
  • Ice

Step-by-Step

  1. Dry shake – add all ingredients to a shaker (without ice) and shake well for 10–15 seconds to build the foam.
  2. Add ice and shake again – shake for a further 15 seconds until well chilled.
  3. Fine strain into a chilled coupe or rocks glass – straight up or over a large cube of ice.
  4. Garnish – dust with a touch of grated nutmeg, or express an orange peel over the top for a warm citrus lift.
