Rhubarb & Strawberry Collins

Ingredients

  • 50ml Three Wrens Rhubarb Gin Fizz
  • 3–4 ripe strawberries, hulled and sliced
  • 20ml Fresh lemon juice
  • 10ml Sugar syrup (or to taste)
  • 75–100ml Soda water
  • Garnish: Strawberry slice and mint sprig
  • Ice

Step-by-Step

  1. Muddle the strawberries – in a shaker or mixing glass, gently mash the strawberries with the lemon juice and sugar syrup.
  2. Add the gin and ice – pour in the Rhubarb Gin Fizz and shake lightly to mix.
  3. Strain into a tall glass filled with ice – fine strain to remove strawberry seeds and pulp.
  4. Top with soda water – adjust the amount depending on how long you want the drink.
  5. Garnish – add a strawberry slice and a sprig of mint for a fresh finish.
