Rhubarb & Strawberry Collins

Ingredients
- 50ml Three Wrens Rhubarb Gin Fizz
- 3–4 ripe strawberries, hulled and sliced
- 20ml Fresh lemon juice
- 10ml Sugar syrup (or to taste)
- 75–100ml Soda water
- Garnish: Strawberry slice and mint sprig
- Ice
Step-by-Step
- Muddle the strawberries – in a shaker or mixing glass, gently mash the strawberries with the lemon juice and sugar syrup.
- Add the gin and ice – pour in the Rhubarb Gin Fizz and shake lightly to mix.
- Strain into a tall glass filled with ice – fine strain to remove strawberry seeds and pulp.
- Top with soda water – adjust the amount depending on how long you want the drink.
- Garnish – add a strawberry slice and a sprig of mint for a fresh finish.
