Raspberry Gin Bakewell Sour

Ingredients
- 50ml Three Wrens Raspberry Gin
- 20ml Fresh lemon juice
- 15ml Sugar syrup
- 10ml Amaretto (for that almond Bakewell note)
- 15ml Egg white or aquafaba (for foam)
- Garnish: Fresh raspberry or a dusting of ground almond
- Ice
Step-by-Step
- Dry shake – add all ingredients to a shaker without ice and shake hard for about 10 seconds to build the foam.
- Add ice and shake again – shake for another 15 seconds until well chilled.
- Strain into a chilled coupe glass – use a fine strainer for a smooth finish.
- Garnish – top with a raspberry or lightly dust with ground almond for a Bakewell-style touch.
