Raspberry Gin Bakewell Sour

Ingredients

  • 50ml Three Wrens Raspberry Gin
  • 20ml Fresh lemon juice
  • 15ml Sugar syrup
  • 10ml Amaretto (for that almond Bakewell note)
  • 15ml Egg white or aquafaba (for foam)
  • Garnish: Fresh raspberry or a dusting of ground almond
  • Ice

Step-by-Step

  1. Dry shake – add all ingredients to a shaker without ice and shake hard for about 10 seconds to build the foam.
  2. Add ice and shake again – shake for another 15 seconds until well chilled.
  3. Strain into a chilled coupe glass – use a fine strainer for a smooth finish.
  4. Garnish – top with a raspberry or lightly dust with ground almond for a Bakewell-style touch.
